This is exciting. One of the classic old-school tofu cookbooks has just been thoroughly revised and re-issued for its 25th anniversary. At its cover price of $22 it’s too expensive, but with Amazon’s discount it’s currently only $15 with free shipping available — a great price for a beautiful full-color book.
I delight in slamming the vegan cookbooks that came out in the 1970s and 1980s as being culinary monstrosities that invariably featured nutloaf. But Louise Hagler was one of the few authors of the period whose stuff was consistently yummy — I’m also a big fan of her New Farm Vegetarian Cookbook, which is loaded with hearty vegan recipes placed alongside black and white photos of Tennessee hippies.
If I could have only one cookbook, I’d rather own something current from Robin Robertson, Dreena Burton, or Isa Chandra Moskowitz. But if you want to broaden your cooking library, the recipes here have a totally different sensibility than the sort of stuff being dreamed up today. Plus, you’ll never again be at a loss for how to prepare tofu. Link.
