For generations, school cafeterias were wastelands for vegetarians, but that seems to be quickly changing. Just six years ago, only 22 percent of surveyed cafeterias offered vegetarian meals on a regular basis. But a new study shows that almost two-thirds of cafeterias consistently now offer such meals.
Given that school cafeterias are by nature conservative institutions that move at a glacial pace, the progress we’re seeing is occurring with incredible speed. PCRM has been doing some great work in pushing these changes along. Link.
