QuarryGirl has a great post on Portland’s all-vegan strip mall. It’s such an amazing concept, and I’m sure it’ll be repeated in other vegan-friendly cities.
The business dynamic at work here is similar to Manhattan’s Curry Row. Each of its Indian restaurants is more viable because together they’ve formed the obvious destination for any New Yorker wanting Indian food. Link.
