Nation’s Restaurant News is the bible of the restaurant industry. They’re also conservative enough to make the NRA look like a bunch of left-wing granola eaters.
So it’s really encouraging to read their “Top 20 Food Trends for 2010.” It’s not all peace, love, and veganism, but most of the trends here are pushing America’s plate away from factory farming.
It’s worth noting that all magazine lists like this are pulled out of somebody’s ass, but the important fact here is that countless restauranteurs hang on this publication’s every word. (Via Jolley.) Link.
