For the second time this week, Nation’s Restaurant News has run a veggie-friendly article, and unlike this past week’s cover story this article’s not locked behind a paywall.
The lead sentence gives you an idea of the paper’s generally begrudging stance toward vegetarians, which is shared by many in the restaurant industry:
Veggie burgers have long been seen as tasteless cardboard hockey pucks that serve only to keep the odd vegetarian from vetoing a group’s restaurant choice.
But now, thanks to growing numbers of flexitarians, vegetarians, and vegans, half-hearted veggie burger offerings no longer suffice.
